For a deeper, more complex flavor, lightly toast the sesame seeds in a dry pan over medium heat for 2-3 minutes before combining with the other spices. Be careful not to burn them! Adjust the amount of red pepper flakes to control the level of spiciness. For a milder blend, reduce or omit the red pepper flakes entirely. Experiment with different herbs and spices to create your own signature blend. Dried oregano, thyme, or marjoram would be excellent additions. To ensure the longevity of the seasoning, store it in a dark glass jar away from direct sunlight and heat.
