Carefully remove the pulp from the preserved lemon, discarding it. Gently rinse the peel under cool water. Slice a thin sliver of the peel for garnish. (5 minutes)

In a cocktail shaker, combine the preserved lemon peel and gin. Muddle gently to release the lemon's oils. Add 1 cup of ice to the shaker, seal, and shake vigorously until well-chilled. (2 minutes)

Fill a rocks glass with fresh ice. Strain the gin mixture over the ice. Top with tonic water. Garnish with the reserved lemon sliver and a sprig of fresh rosemary. (3 minutes)

For a less intense lemon flavor, use only half of the preserved lemon peel.
Experiment with different gins to find your perfect flavor combination. London Dry gins work particularly well.
If you don't have preserved lemon, you can substitute a small piece of fresh lemon peel and a tiny pinch of sea salt.
