In a large skillet set over medium-high heat, brown the pork sausage. Crumble the sausage as it cooks, stirring in fennel seeds, dried sage, salt, and pepper. Cook until the sausage is fully browned, about 5 to 7 minutes. Drain off any excess grease. (7 minutes)

Arrange the poblano pepper halves cut-side up in a baking dish. Evenly distribute the softened cream cheese among the pepper halves, spreading it into a thin layer. (5 minutes)

Spoon the cooked sausage mixture generously into the cream cheese-lined peppers. Sprinkle the shredded pepper Jack cheese evenly over the sausage filling. (5 minutes)

Bake in the preheated oven until the poblano peppers are tender and the filling is hot and bubbly, approximately 20 minutes. For a more golden-brown cheese topping, broil for the last 2 minutes, watching carefully to prevent burning. (20 minutes)

For a milder flavor, remove the seeds and membranes from the poblano peppers more thoroughly. If you like your peppers with some heat, leave some of the seeds intact.
To save time, you can prepare the sausage filling ahead of time. Store it in the refrigerator for up to 24 hours. Be sure to bring the filling to room temperature before stuffing the peppers.
Feel free to experiment with different types of cheese! Cheddar, Monterey Jack, or even a sprinkle of Parmesan would be delicious.
Add some diced onion and garlic to the sausage while browning for even more flavor.
