Follow The Directions

01

Step
7 mins

In a large skillet, heat over medium-high heat. Add sausage and onion and cook, breaking up the sausage with a spoon, until browned and the onion is softened, about 5-7 minutes. Drain off any excess grease and set aside to cool slightly.

02

Step
5 mins

In a large bowl, whisk together the flour, baking powder, and salt. In a separate bowl, whisk together the milk and eggs. Gradually add the wet ingredients to the dry ingredients, whisking until just combined. Be careful not to overmix; a few lumps are okay.

03

Step
2 mins

Gently fold the cooled sausage and onion mixture into the pancake batter, ensuring it's evenly distributed.

04

Step
6 mins

Heat a non-stick griddle or large skillet over medium heat. For each pancake, pour about 1/4 cup of batter onto the hot griddle. Cook for about 3 minutes per side, or until golden brown and cooked through. Repeat with the remaining batter.

05

Step
1 mins

Serve immediately with butter or margarine and your favorite syrup, or enjoy them plain!

For an extra layer of flavor, try adding a pinch of red pepper flakes to the sausage mixture while cooking.
These pancakes are also delicious with a dollop of sour cream or a sprinkle of shredded cheese on top.
If you don't have bulk sausage, you can remove the sausage from its casings and crumble it while cooking.
The batter can be made ahead of time and stored in the refrigerator for up to 24 hours. Just give it a good stir before using.
Feel free to experiment with different types of sausage, such as Italian or chorizo, to customize the flavor.
