Roast in the preheated oven until the chicken is no longer pink at the bone and the juices run clear, approximately 40 to 50 minutes. Stir the vegetables halfway through the cooking time to ensure even browning. An instant-read thermometer inserted near the bone should read at least 165 degrees F (74 degrees C). (50 minutes)

In a small bowl, stir together the chopped fresh parsley, minced garlic, and grated orange zest to create a bright and aromatic gremolata. (5 minutes)

To serve, toss the roasted vegetables with the remaining 2 teaspoons of harissa sauce for an extra layer of flavor. Sprinkle generously with the parsley mixture just before serving. (5 minutes)

For a richer flavor, marinate the chicken with harissa sauce for at least 30 minutes, or even overnight, before roasting.
Feel free to substitute other vegetables based on your preferences and what's in season. Broccoli, bell peppers, or sweet potatoes would all be delicious additions.
If you don't have fresh parsley, dried parsley can be used, but reduce the amount to 1 tablespoon.
Adjust the amount of harissa sauce according to your spice preference. Start with less and add more to taste.
To ensure the chicken is cooked through, use a meat thermometer to check the internal temperature.
