Follow The Directions

01

Step

Coarsely chop 3 to 4 shrimp and place them in a medium bowl. (5 minutes)

02

Step

Pulse the remaining shrimp in a food processor until finely ground, but not pureed. Transfer to the bowl with the chopped shrimp. (5 minutes)

03

Step

In a separate bowl, whisk together the egg, panko bread crumbs, lemon juice, lemon zest, seafood seasoning, and black pepper. (3 minutes)

04

Step

Gently fold the egg mixture into the shrimp mixture, being careful not to overmix. Add the diced frozen butter. (2 minutes)

05

Step

Form the mixture into 3 equal-sized patties, about 3/4-inch thick. (5 minutes)

06

Step

Cover the patties with plastic wrap and refrigerate for at least 30 minutes to allow them to firm up. (30 minutes)

07

Step

Heat the canola oil in a skillet over medium heat until shimmering. (2 minutes)

08

Step

Carefully place the patties in the hot skillet and cook until golden brown and cooked through, about 4 to 5 minutes per side. (8-10 minutes)

For optimal flavor, use high-quality, fresh shrimp. Wild-caught shrimp often has a superior taste.
Freezing the butter before adding it to the patties helps to keep them moist during cooking.
Do not overmix the shrimp mixture, as this can result in tough burgers. A light touch is key.
Serve the shrimp burgers on toasted brioche buns with your favorite toppings, such as a lemon-dill aioli, sliced avocado, and crisp lettuce.
