Step

Preheat an air fryer to 325 degrees F (165 degrees C) according to manufacturer's instructions. Line the basket with parchment paper and spray with nonstick cooking spray. (2 minutes)

In a bowl, combine almond flour, Greek yogurt, 2 tablespoons sweetener, baking powder, cinnamon, vanilla extract, and salt. Mix well until a dough forms. Use your hands to bring the dough together. (5 minutes)

Dust your working area with the extra 1 tablespoon of almond flour. Divide the dough into 4 equal pieces and shape each into a ball. Cut each ball into 8 equal pieces using a bench scraper or knife. Roll each piece in the almond flour, then roll between your hands into a long, thin rope (the thinner the rope, the crispier they will be). (10 minutes)

Place all 8 ropes, one by one, in a circular mound into the prepared air fryer basket, creating a funnel cake shape. Repeat with the remaining dough balls. Spray each funnel cake lightly with cooking spray. (5 minutes)

Air fry until golden brown, about 5 to 6 minutes. Flip each funnel cake over, spray with cooking spray, and air fry for an additional 3 to 4 minutes, until golden brown and crispy. (10 minutes)

Sprinkle the remaining 2 tablespoons of sweetener over the funnel cakes immediately after removing them from the air fryer. Serve warm and enjoy! (2 minutes)

For an extra touch of flavor, try adding a pinch of nutmeg or cardamom to the dough.
If you don't have parchment paper, you can lightly grease the air fryer basket with cooking spray, but parchment paper is recommended for easy removal.
The thickness of the ropes will affect the cooking time, so keep a close eye on them to prevent burning. If they start to brown too quickly, reduce the air fryer temperature slightly.
