Follow The Directions

01

Step

In a large slow cooker, combine the chopped onion, minced garlic, ketchup, beer, white vinegar, Worcestershire sauce, and liquid smoke. Stir to combine and set aside. (Prep time: 5 minutes)

02

Step

In a separate bowl, create the spice rub. Mix together the salt, pepper, chili powder, smoked paprika, oregano, and brown sugar until well combined. (Prep time: 3 minutes)

03

Step

Generously rub the spice mixture all over the beef brisket, ensuring every surface is coated. Place the brisket into the slow cooker, nestled in the sauce. Sprinkle any remaining spice mixture over the top. (Prep time: 5 minutes)

04

Step

Cover the slow cooker and cook on Low heat for 10 to 12 hours, or until the brisket is incredibly tender and easily shredded with a fork. (Cook time: 10-12 hours)

05

Step

Carefully transfer the cooked brisket to a large bowl. Using a spoon or ladle, remove and discard any excess fat from the sauce remaining in the slow cooker. (Prep time: 5 minutes)

06

Step

Pour 2 cups of the sauce from the slow cooker into a saucepan. Bring to a gentle simmer over medium heat. In a small bowl, dissolve the cornstarch in the water to create a slurry. Stir the cornstarch slurry into the simmering sauce. Cook, stirring constantly, until the sauce thickens to your desired consistency, approximately 5 to 10 minutes. (Prep time: 2 minutes, Cook time: 5-10 minutes)

07

Step

While the sauce is thickening, shred the brisket into small, bite-sized pieces using two forks. Discard any large pieces of fat. (Prep time: 10 minutes)

08

Step

For a smoother sauce, carefully transfer the thickened sauce and the remaining sauce from the slow cooker into a blender, filling the pitcher no more than halfway. Secure the lid tightly and cover with a kitchen towel. Pulse several times to start, then purée until completely smooth. Alternatively, use an immersion blender directly in the slow cooker to achieve a smooth consistency. (Prep time: 5 minutes)

09

Step

Return the puréed sauce to the slow cooker. Add the shredded brisket to the sauce, stirring well to ensure the beef is fully coated. (Prep time: 3 minutes)

10

Step

Serve the BBQ beer beef hot on potato buns, garnished with your favorite toppings such as coleslaw, pickles, or sliced onions. Enjoy! (Prep time: 5 minutes)

For a deeper smoky flavor, consider searing the brisket in a hot skillet before placing it in the slow cooker.
Adjust the amount of chili powder and smoked paprika to suit your preferred level of spiciness.
The brisket can be made a day ahead of time. Simply shred the beef and store it in the sauce in the refrigerator. Reheat gently on the stovetop or in the slow cooker before serving.
If you don't have potato buns, any soft roll or bun will work well.
Leftover BBQ beer beef is excellent in tacos, quesadillas, or served over mashed potatoes.
