For an even richer flavor, consider searing the roast in a cast-iron skillet. Adjust the amount of seasoning to your preference. Fresh herbs can also be used in place of dried herbs for a brighter taste. If you prefer a thicker sauce, remove the roast and vegetables from the slow cooker after cooking. In a separate saucepan, whisk together 2 tablespoons of cornstarch with 1/4 cup of cold water. Stir the cornstarch mixture into the slow cooker juices and bring to a simmer over medium heat, stirring constantly, until the sauce thickens.
