Brown the Sausage (5 minutes): In a nonstick skillet over medium-high heat, cook the sausage, breaking it into small pieces with a spatula until browned. Remove with a slotted spoon and transfer to a 6-quart slow cooker.

Sauté the Aromatics (5 minutes): Add the chopped onion and celery to the same skillet. Cook and stir until softened, about 3-5 minutes. Add the minced garlic and cook, stirring, for about 30 seconds until fragrant.

Combine and Slow Cook (7-8 hours on Low or 3-4 hours on High): Pour the vegetable mixture into the slow cooker with the sausage. Add the can of tomatoes with their juices, breaking them into bite-sized pieces. Pour in the chicken stock or broth and stir to combine. Cover and cook on Low for 7-8 hours or on High for 3-4 hours.

Season (During cooking process): About halfway through the cooking process, season with salt, pepper, and the optional Italian herb seasoning blend to taste.

Add Tortellini and Kale (30 minutes before serving): Approximately 30 minutes before serving, turn the slow cooker to High. Add the tortellini and chopped kale. Adjust seasoning as needed. Cover and cook until the tortellini is tender, about 30 minutes.

Serve (immediately): Serve warm, garnished with freshly grated Parmesan cheese.

For a richer flavor, use bone broth instead of regular chicken broth or stock.
Feel free to add other vegetables like zucchini or spinach along with the kale.
If you prefer a milder flavor, use sweet Italian sausage instead of hot.
For a vegetarian option, omit the sausage and add a can of drained and rinsed cannellini beans.
