For a smoother consistency, use an immersion blender to partially puree the soup before serving. Adjust the amount of water or broth to achieve your desired soup thickness. Feel free to add other vegetables, such as diced bell peppers or chopped kale, during the last hour of cooking. If using low-sodium broth or bouillon, season with salt and pepper to taste before serving. For a vegetarian version, omit the sausage and use vegetable broth.
