For an extra layer of flavor, try adding a pinch of garlic powder to the bread crumb mixture. If you don't have Pinot Grigio, a dry Sauvignon Blanc or even a squeeze of fresh lemon juice can be used in the sauce as a substitute. Be careful not to overcook the sole, as it can become dry. The fish is done when it flakes easily with a fork.
