Finely chop the onion, red pepper, Scotch bonnet chiles, papaya, and garlic in a food processor until finely chopped. (5 minutes)

Transfer the mixture to a large pot. Stir in the mustard powder, sugar, white wine, malt vinegar, water, and lemon juice. (2 minutes)

Bring the mixture to a simmer over medium heat. Reduce heat to medium-low, and continue simmering, stirring frequently to prevent sticking, until the sauce has thickened considerably. (Approximately 1 hour)

Once the sauce has reached a desired thick consistency, remove it from the heat and stir in the prepared yellow mustard until well combined. (2 minutes)

Allow the sauce to cool completely before transferring it to sterilized jars or airtight containers. Store in the refrigerator for up to 2 weeks. The flavor will continue to develop over time.

For a smoother sauce, blend the final product with an immersion blender before jarring.
Adjust the number of Scotch bonnets to your desired level of heat. Remember, a little goes a long way!
Use a stainless steel or non-reactive pot to prevent discoloration of the sauce.
