Scramble the Eggs: Lightly spray a small skillet with cooking spray and set over low heat. Pour in the egg mixture, add green onions, salt, and pepper. Cook, gently turning with a spatula, until the eggs are softly scrambled. (3-5 minutes) Remove from heat and set aside.

Assemble the Quesadillas: Place one tortilla in the skillet over low heat. Spread half of the nacho cheese sauce over the tortilla, followed by half of the chopped sausage and scrambled eggs. Top with another tortilla.

Cook the Quesadillas: Cook, carefully flipping once, until both sides are lightly browned and the cheese is melted and gooey. (approximately 5 minutes per quesadilla) Repeat with the remaining ingredients to make the second quesadilla. Serve immediately with your favorite toppings, such as salsa, hot sauce, or sour cream.

For an extra layer of flavor, consider adding diced bell peppers or jalapeños to the scrambled eggs.
Experiment with different types of cheese, such as cheddar, Monterey Jack, or pepper jack, to create your perfect flavor combination.
These quesadillas can be assembled ahead of time and stored in the refrigerator until ready to cook.
