Follow The Directions

01

Step

In a small bowl, whisk together the peanut butter, soy sauce, sambal oelek, rice vinegar, grated ginger, grated garlic, and red pepper flakes. Slowly whisk in water, a little at a time, until you reach your desired sauce consistency. Set aside. (5 minutes)

02

Step

Heat a medium skillet over medium heat. Add the ground beef, green onions, and minced garlic. Brown the beef, breaking it up with a spoon, until cooked through. (5 minutes)

03

Step

Stir in the rice vinegar, sambal oelek, cardamom, minced ginger, cinnamon, salt, and pepper. Reduce heat to low and simmer for 2-3 minutes, allowing the flavors to meld. (3 minutes)

04

Step

Divide the ground beef mixture evenly among the 12 Napa cabbage leaves. Top each with a generous dollop of the peanut sauce, a squeeze of fresh lime, and a sprinkle of chopped peanuts. (5 minutes)

05

Step

Fold up the sides of the cabbage leaves to create a wrap, and serve immediately. Enjoy!

For a smoother peanut sauce, use warm water. Adjust the amount of sambal oelek to your desired level of spiciness. If Napa cabbage is unavailable, you can substitute with butter lettuce or iceberg lettuce leaves, though the texture will be different.
These wraps are delicious served with a side of steamed rice or a refreshing cucumber salad.

The spice level was just right for me, but my kids preferred a little less sambal oelek. Next time, I'll make a mild batch and a spicy batch.
