Follow The Directions

01

Step

Prepare the lettuce: Slice lettuce crosswise into 1-inch strips and transfer into a large bowl.

02

Step

Sauté aromatics: Add vegetable oil to a large skillet, and place over medium-high heat. (1 minute)

03

Step

Infuse the oil: When the oil is hot, add shallots, green onions, and garlic, and cook and stir until shallots start to turn translucent. (2 minutes)

04

Step

Create the sauce: Add brown sugar, rice vinegar, fish sauce, tamarind paste, soy sauce, chili sauce, and Sriracha, and stir to combine. As soon as the sauce starts to boil, turn off heat and set aside until needed.

05

Step

Cook the pasta: Meanwhile, bring a large pot of salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until al dente, about 11 minutes, or about 30 seconds less than package directions.

06

Step

Combine pasta and sauce: Use tongs to transfer noodles into the pan of sauce, and cook, stirring, over medium-high heat. (30 seconds)

07

Step

Dress the noodles: Transfer noodles and sauce to the bowl of lettuce, and toss until everything is evenly combined, about 1 minute, or longer if you prefer the lettuce more wilted.

08

Step

Serve: Serve immediately with fresh lime, more hot sauce, and freshly chopped cilantro if desired.

Adjust the level of spiciness according to your preference by adding more or less chili sauce or Sriracha.
For a vegetarian option, you can replace the fish sauce with soy sauce or tamari.
Feel free to experiment with different types of lettuce, such as butter lettuce or iceberg lettuce, to create your own unique flavor profile.
