Sauté Sausage and Garlic: In a large skillet over medium heat, cook Italian sausage until browned, about 5 minutes. Remove sausage and set aside. Drain excess grease, leaving about 1 tablespoon of drippings. Add garlic and cook until fragrant, about 1 minute. (6 minutes)

Combine and Simmer: Stir in half of the steamed broccoli rabe. Cook until wilted, then add the remaining rabe and diced tomatoes. Cook until rabe is tender, about 5 minutes; season with salt and pepper. (5 minutes)

Final Touches: Return sausage to the skillet and heat through. Sprinkle with Parmesan cheese, crushed red pepper flakes, and olive oil. Serve over hot rotini.

For a milder flavor, use sweet Italian sausage instead of hot.
If you don't have sausage drippings, use olive oil. The sausage drippings add to the flavor, but olive oil is an acceptable substitute.
Adjust the amount of crushed red pepper flakes to your preference. Start with a small amount and add more to taste.
