For a milder flavor, use sweet Italian sausage instead of hot.
To increase the heat, add a pinch of cayenne pepper or red pepper flakes along with the other seasonings.
Feel free to substitute or add other vegetables like zucchini, bell peppers, or spinach based on what you have available.
For a vegetarian option, omit the sausage and use vegetable broth. Consider adding a can of drained and rinsed cannellini beans for added protein.
The soup tastes even better the next day, as the flavors have more time to meld together.
