Once boiling, reduce the heat to low, cover the pot, and let the soup simmer gently, stirring occasionally to prevent sticking. Continue simmering for about 2 hours, or until the split peas are tender and the soup has reached your desired consistency. Remove the bay leaves before serving.

For an extra creamy texture, remove some of the pork belly pieces and use an immersion blender to puree a portion of the soup before serving. Stir the pork belly back in afterward. Adjust the amount of water or broth depending on your desired thickness.
Consider adding a splash of apple cider vinegar or lemon juice at the end to brighten the flavors.
Garnish with a swirl of crème fraîche or a sprinkle of fresh parsley for an elegant touch.
