Follow The Directions

01

Step
5 mins

In a mixing bowl, whisk together the flour, milk, egg, crème fraîche, salt, and cayenne pepper until a smooth batter forms. The batter should slowly drip off the whisk. Adjust the consistency by adding small amounts of flour if too thin, or milk if too thick. (5 minutes)

02

Step
5 mins

Bring a large pot of salted water to a gentle simmer over medium-high heat. Using a spätzle maker, a cheese grater with large holes, or a colander with large holes, push the batter through into the simmering water using a spatula or scraper. (5 minutes)

03

Step
20 mins

Cook the spätzle in batches, ensuring not to overcrowd the pot. They are done when they rise to the surface of the water, typically around 3 minutes. Remove the cooked spätzle with a slotted spoon and set aside. Repeat with the remaining batter. (15-20 minutes)

For an enhanced flavor, try using browned butter infused with fresh sage to toss the cooked spätzle. Experiment with different cheeses, such as Gruyère or Parmesan, for a richer dish.
If you don't have a spätzle maker, a cheese grater with large holes works perfectly. Alternatively, you can use a cutting board and knife to cut small pieces of dough and drop them into the simmering water.
Spätzle can be made ahead of time and reheated. Toss with a little oil or butter to prevent sticking.
