Follow The Directions

01

Step
5 mins

Preheat oven to 375 degrees F (190 degrees C). (5 minutes)

02

Step
1 hrs

Arrange the sweet potatoes on a baking sheet, and bake in preheated oven for 1 hour.

03

Step
20 mins

Cut a slit into the top of each potato. Carefully scoop out the pulp from the potato, leaving the skins intact; place the potato in a large bowl. Add the margarine and pineapple to the potato and stir together. Stuff the potato mixture back into the reserved potato skins. Sprinkle the pecans over each potato. (20 minutes)

04

Step
12 mins

Return the stuffed potato skins to the oven; bake another 12 minutes.

For a richer flavor, try using browned butter instead of margarine.
Toasting the pecans before chopping enhances their nutty flavor.
Feel free to add a pinch of cinnamon or nutmeg to the sweet potato mixture for warmth.
