Rehydrate the shiitake mushrooms: Place the dried shiitake mushrooms in a bowl and cover with hot water. Let them soak until softened, approximately 5-10 minutes.

Prepare for baking: Position an oven rack about 6 inches from the broiler and preheat the broiler. Lightly grease a 9x13-inch baking dish with cooking spray.

Layer the rice: Spread the cooked short-grain rice evenly across the bottom of the prepared baking dish. Sprinkle the aji nori furikake evenly over the rice.

Create the seafood mixture: Drain the rehydrated shiitake mushrooms, squeezing out any excess water. In a large bowl, combine the mushrooms, shredded imitation crabmeat, mayonnaise, sour cream, tobiko, and kamaboko. Mix well to ensure all ingredients are evenly distributed.

Assemble the bake: Spread the seafood mixture evenly over the furikake-covered rice in the baking dish, creating a uniform layer.

Broil to perfection: Place the baking dish under the preheated broiler and broil until the top is lightly browned and bubbly, about 10-15 minutes. Watch carefully to prevent burning.

Serve and enjoy: Remove the sushi bake from the oven and let it cool slightly before slicing it into approximately 24 portions. Serve each portion on a sheet of seasoned Korean seaweed. Instruct guests to wrap the seaweed around the sushi bake and enjoy immediately.

Feel free to experiment with different types of seafood in the mixture, such as cooked shrimp or smoked salmon.
For a spicier kick, add a drizzle of sriracha mayo on top before broiling.
If you don't have a broiler, you can bake the sushi bake in a preheated oven at 375°F (190°C) for about 20-25 minutes, or until heated through and lightly browned.
