In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined. (5 minutes)

Generously coat a 2-quart baking dish with cooking spray. Arrange the torn bread pieces evenly across the bottom of the dish. Sprinkle the crumbled sausage over the bread, followed by the Monterey Jack cheese. Pour the egg mixture evenly over the sausage and cheese. Top with the shredded Cheddar cheese. (10 minutes)

Cover the baking dish tightly with plastic wrap and refrigerate for at least 8 hours, or preferably overnight, to allow the bread to absorb the egg mixture. (8 hours)

Preheat oven to 325 degrees F (165 degrees C). Remove the casserole from the refrigerator and let it sit at room temperature for 15 minutes to allow it to warm up slightly. (20 minutes)

Bake the casserole in the preheated oven until it is puffed, golden brown, and a knife inserted into the center comes out clean, about 45 minutes. Let stand for 10 minutes before serving. (55 minutes)

For a richer flavor, use brioche or challah bread.
Feel free to substitute your favorite cheeses or add vegetables like sautéed onions, peppers, or mushrooms.
If you don't have time to refrigerate overnight, let it sit for at least 30 minutes before baking.
