Follow The Directions

In a Dutch oven or large, heavy-bottomed pot, combine the chopped tomatoes, onion, diced green chilies, white vinegar, brown sugar, garlic powder, ground cumin, dried oregano, ground coriander, and salt. (5 minutes)

Bring the mixture to a simmer over medium-low heat, stirring occasionally to prevent sticking. (5 minutes)

Reduce the heat to low and continue to simmer, stirring occasionally, until the salsa has thickened to your desired consistency. This will take approximately 3 hours. The longer it simmers, the sweeter and more concentrated the flavors will become. (3 hours)

Taste and adjust seasonings, adding more salt or hot pepper sauce to your liking. (2 minutes)

Allow the salsa to cool completely before transferring it to airtight containers. Store in the refrigerator. (30 minutes)

For a richer flavor, roast the tomatoes and onion before chopping and adding them to the pot.
If you prefer a smoother salsa, use an immersion blender to partially blend the mixture after simmering.
This salsa can be frozen for longer storage. Be sure to use freezer-safe containers and leave some headspace to allow for expansion.
Experiment with different types of hot pepper sauce to customize the heat level.
