Chill the wings: Using a slotted spoon or spider, transfer the fried wings directly to the prepared ice bath for about 2 minutes, this makes them extra crispy. Then pat the wings dry with paper towels.

Toss and serve: Return the patted dry wings to the sauce in the skillet. Toss gently to coat each wing evenly with the sweet and spicy glaze. Transfer the wings to a serving platter and garnish generously with sliced green onions.

For an extra layer of flavor, consider adding a splash of soy sauce or a dash of smoked paprika to the sauce.
If you prefer a thicker sauce, you can simmer it for a longer period, but be mindful not to burn it.
The ice bath is an important step to make the wings extra crispy.
Adjust the amount of hot sauce to your preference. If you want to make it milder, consider a sweet chili sauce.
