Heat olive oil in a large soup pot over medium-high heat. Cook and stir turkey, onion, and garlic in the hot oil until turkey is crumbly, evenly browned, and no longer pink. (Approximately 8-10 minutes)

Season turkey mixture with ginger and red pepper flakes. (Approximately 1 minute)

Stir sweet potatoes into pot and cover with 6 cups water. Simmer until sweet potatoes are tender. (Approximately 10 minutes)

Meanwhile, bring 2 1/4 cups water to a boil in a saucepan. Remove from the heat and stir in couscous. Cover and let stand for 10 minutes, then fluff with a fork; set aside. (Approximately 15 minutes)

Mix peanut butter with about 1 cup liquid from the sweet potato stew in a bowl until smooth. Pour peanut butter mixture back into the pot. (Approximately 3 minutes)

Mix Swiss chard into stew and cook until tender, stirring often. (Approximately 5 minutes)

Season with salt and black pepper to taste. (Approximately 1 minute)

Serve stew spooned over couscous.

For a vegetarian option, substitute the ground turkey with 1 (15-ounce) can of chickpeas, rinsed and drained. Add the chickpeas to the pot along with the sweet potatoes.
Feel free to adjust the amount of red pepper flakes to your preference. For a milder flavor, use 1/4 teaspoon, or omit it altogether.
If you don't have Swiss chard, spinach or kale can be used as a substitute.
Store leftover stew in an airtight container in the refrigerator for up to 3 days.
