Preheat your oven to 400 degrees F (200 degrees C). (5 minutes)

Prepare the sweet potatoes and garlic: Prick the sweet potatoes several times with a fork. Cut off the top of the garlic heads to expose the cloves, removing about 1/4 inch. Brush the exposed cloves with olive oil and wrap each head in aluminum foil. (10 minutes)

Roast: Place the sweet potatoes and wrapped garlic heads directly on the oven racks. Bake for approximately 1 hour. Check the sweet potatoes for tenderness; they should be easily pierced with a fork. Remove the sweet potatoes when ready, and continue baking the garlic until the cloves are tender and lightly browned. (60 minutes)

Mash: Once cooled slightly, peel the sweet potatoes and place them in a mixing bowl. Squeeze the roasted garlic cloves into the bowl. Add the softened butter, sour cream, cream cheese, and cayenne pepper. Mash until smooth and well combined. Season with salt and pepper to taste. (15 minutes)

Reheat (Optional): Transfer the mashed potatoes to a 1 1/2 quart baking dish. Return to the oven for about 15 minutes to reheat before serving. (15 minutes)

For a smoother mash, use a potato ricer or food mill instead of a standard masher.
Adjust the amount of cayenne pepper to suit your spice preference. A pinch of smoked paprika can also add a nice depth of flavor.
The roasted garlic can be prepared ahead of time and stored in the refrigerator for up to a week. Simply reheat it before adding to the sweet potatoes.
