Prepare the sweet potatoes: Cut each sweet potato in half crosswise. Quarter each half lengthwise. Cut each quarter evenly into 2 to 4 fry-shaped pieces. Aim for uniform size for even cooking. (10 minutes)

Season and coat: Place the sweet potatoes on a rimmed baking sheet. Sprinkle with kosher salt. Drizzle with olive oil. Toss well to ensure all fries are evenly coated. Spread the fries in a single layer on the baking sheet. Season with freshly ground black pepper. (5 minutes)

Bake: Bake in the preheated oven, stirring and flipping the fries every 10 minutes to promote even browning and crisping, until golden brown and tender, about 20 to 30 minutes.

For extra crispiness, soak the sweet potato fries in cold water for 30 minutes before baking. Pat them completely dry before tossing with oil and seasonings.
Experiment with different seasonings! Try adding a pinch of smoked paprika, garlic powder, or chili powder for a flavor boost.
Serve immediately for the best texture. These fries are delicious on their own or with your favorite dipping sauce.
