Step

In a skillet, cook and stir ground beef over medium-high heat until completely browned (5-7 minutes). Season with taco seasoning; stir well and set aside.

Bring 3 quarts of water to a rolling boil in a 5-quart stockpot. Break ramen noodles into bite-sized pieces and add to the boiling water. Cook, stirring frequently, until noodles are tender (3-5 minutes); drain the noodles thoroughly.

Pour the can of Mexican-style stewed tomatoes into a bowl. Break the tomatoes into smaller pieces using your hand or a spoon. In a separate bowl, dissolve 2 of the seasoning packets from the ramen noodles in 1 cup of water; stir well and add to the tomatoes.

Pour the tomato mixture into the stockpot and place over medium heat. Stir in the cooked ground beef; cook and stir until the mixture is heated through (3-5 minutes). Add the drained noodles to the beef mixture; stir to coat evenly. Season the mixture with the remaining ramen noodle seasoning packet to taste.

Remove the stockpot from the heat. Gently stir in the sour cream until well combined. Serve immediately, topped with shredded Cheddar cheese.

For a spicier kick, add a pinch of red pepper flakes or a dash of hot sauce to the tomato mixture.
Feel free to substitute ground turkey or chicken for the ground beef. You can also add other vegetables, such as corn or black beans, for extra flavor and nutrition.
If you don't have Mexican-style stewed tomatoes, you can use regular stewed tomatoes and add a pinch of chili powder and cumin for a similar flavor.
