For an extra layer of smoky flavor, consider using smoked andouille sausage.
Feel free to adjust the amount of cayenne pepper to suit your spice preference.
If you don't have fire-roasted tomatoes, regular diced tomatoes will work just fine. You can add a pinch of smoked paprika for a similar smoky flavor.
This recipe is easily doubled or tripled to feed a larger crowd. Just make sure your rice cooker is large enough to accommodate the increased volume.
