Toast the Pecans: In a dry skillet over medium heat, toast the pecan pieces, stirring frequently, until lightly golden and fragrant (about 3-5 minutes). Set aside to cool.

Prepare the Slaw Base: In a large bowl, combine the sliced savoy cabbage, sliced peaches, red bell pepper, yellow bell pepper, green onions, and celery seed. Cover and refrigerate for at least 45 minutes to allow the flavors to meld.

Make the Peach Vinaigrette: In a blender or food processor, puree the 1/2 cup of chopped peaches until smooth. Transfer the peach puree to a separate bowl. Whisk in the vegetable oil, honey, lemon juice, salt, and pepper until well combined. Chill until ready to serve.

Combine and Serve: Just before serving, pour the peach vinaigrette over the slaw mixture and toss gently to coat evenly. Garnish with fresh mint sprigs.

For a deeper pecan flavor, try using smoked pecans.
If you don't have savoy cabbage, you can substitute with napa cabbage.
The slaw can be prepared a few hours in advance, but wait to dress it until just before serving to prevent it from becoming soggy.
