Submerge the frozen tofu: In a large saucepan, bring water to a gentle simmer. Place the frozen tofu (still in its package) into the simmering water. Remove from heat and allow the tofu to thaw completely in the hot water. (Approximately 20 minutes)

Press the tofu: Once thawed, remove the tofu from its packaging and place it on a plate. Cover with another plate and apply a 3- to 5-pound weight on top. Press for 20 to 30 minutes to extract excess moisture. Discard the drained liquid.

Sauté aromatics: While the tofu is draining, heat 2 teaspoons of vegetable oil in a small skillet over medium heat. Add the chopped onion and celery; sauté until softened and lightly browned. (Approximately 5 minutes). Remove from heat and set aside.

Combine ingredients: Finely chop the pressed tofu and transfer it to a mixing bowl. Add the sautéed onion and celery mixture, shredded Cheddar cheese, beaten egg, salt, and pepper. Mix thoroughly until all ingredients are well combined.

Fry the burgers: Pour 1/4 inch of vegetable oil into a large skillet and heat over medium-high heat. Drop the tofu mixture into the hot oil in six equal portions. Gently flatten each portion with a spatula to form patties. Fry until golden brown and crispy, about 5 to 7 minutes per side. Serve hot and enjoy!

For best results, ensure the tofu is thoroughly pressed to remove excess water; this will help the burgers maintain their shape during frying.
Feel free to experiment with different cheeses and seasonings to customize the flavor profile to your liking. A pinch of garlic powder or a dash of smoked paprika can add an extra layer of depth.
Serve these tofu burgers on toasted buns with your favorite toppings, such as lettuce, tomato, avocado, and a dollop of your favorite sauce or aioli.
