In a gallon-sized resealable bag, combine the coconut milk, kecap manis, curry paste, turmeric powder, ginger, and vegan fish sauce. Seal the bag, and shake vigorously to ensure all ingredients are well mixed. (5 minutes)

Cut the pressed and drained tofu into 2-inch cubes. Place the tofu pieces into the marinade bag, seal, and gently toss to coat each piece evenly. Allow the tofu to marinate for at least 30 minutes, or up to 2 hours for a more intense flavor. Simultaneously, soak the bamboo skewers in water for at least 30 minutes to prevent burning during grilling. (30 minutes)

In a separate bowl, whisk together the peanut butter, coconut milk, chili-garlic sauce, kecap manis, lime juice, and freshly grated ginger until the sauce is smooth and creamy. Set aside. (5 minutes)

Preheat an outdoor grill to medium heat and lightly oil the grate to prevent sticking. (10 minutes)

Remove the tofu pieces from the marinade, allowing any excess to drip off. Thread an equal number of tofu pieces onto each soaked skewer. (10 minutes)

Place the skewers on the preheated grill and cook, turning occasionally, until browned and slightly charred on all sides. Baste the skewers with the remaining marinade as they cook, ensuring they stay moist and flavorful, for a total of 10 to 15 minutes.

Transfer the grilled tofu satay skewers to a serving platter. Drizzle generously with the prepared peanut sauce and serve immediately, garnished with extra peanut sauce and fresh lime wedges on the side.

For a richer peanut sauce, try adding a splash of toasted sesame oil or a pinch of red pepper flakes for an extra kick.
If you don't have an outdoor grill, you can also cook the skewers under a broiler or in a grill pan on the stovetop.
To make ahead, marinate the tofu overnight and prepare the peanut sauce in advance. Assemble and grill the skewers just before serving.
