For the best results, use plantains that are ripe but still firm. They should be mostly yellow with some black spots.
A tostonera (plantain press) makes flattening the plantains much easier, but a flat-bottomed glass or even a small plate can be used as a substitute.
Don't skip the second frying! It's what gives tostones their signature crispy texture.
Experiment with different seasonings! Try adding a pinch of cumin, chili powder, or smoked paprika for a unique twist.
