Recipe View 10 mins Render the Bacon (10 minutes): In a large, heavy-bottomed skillet set over medium-high heat, cook the bacon, turning occasionally, until crisp and deeply golden brown. Transfer the bacon to a paper towel-lined plate to drain. Once cool enough to handle, crumble the bacon into small pieces and set aside.

Recipe View 5 mins Prepare the Potato Dough (5 minutes): Place the peeled and chopped potatoes in a food processor or high-powered blender. Process until completely smooth, resembling a puree. Transfer the potato puree to a mixing bowl. Add the flour, beaten eggs, baking powder, and salt. Stir until just combined, forming a sticky dough. Do not overmix.

Recipe View 20 mins Form and Cook the Haluski (15-20 minutes): Bring a large pot of lightly salted water to a rolling boil. While holding a small cutting board over the pot, scoop a generous spoonful of the potato dough onto the board. Use a knife to cut small, tablespoon-sized pieces of dough, dropping them directly into the boiling water as you go. Continue this process until all the dough is used.

Recipe View 3 mins Cook the dumplings until they float to the surface and are cooked through, about 2-3 minutes. Once cooked, use a slotted spoon or spider to transfer the haluski to a large serving bowl.

Recipe View 5 mins Assemble and Serve (5 minutes): As you transfer each batch of cooked haluski to the serving bowl, sprinkle generously with crumbled bacon and shredded brick cheese. Repeat until all the haluski is cooked and coated with bacon and cheese. Gently toss to combine all the ingredients. Serve immediately while hot and the cheese is melted and gooey.

For a vegetarian option, omit the bacon and sauté some finely chopped onions and mushrooms in butter until caramelized. Use this mixture in place of the bacon.
If you don't have brick cheese, feta, Monterey Jack, or even a mild cheddar can be substituted.
The dough can be a bit sticky, so lightly flour your hands and the cutting board to prevent sticking. You can also use a pastry scraper to cut the dumplings.
Haluski is best served fresh, but leftovers can be stored in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave.

I made this with feta cheese, and it was amazing! The tanginess of the feta really complemented the bacon and potatoes.

The dough was a little tricky to work with at first, but once I got the hang of it, it was easy. Will definitely make this again!

I added some caramelized onions and mushrooms for a vegetarian version, and it was a hit!
