Follow The Directions

01

Step

Peel and quarter the potatoes, then transfer them to a 6-quart pot. Add enough cold water to cover the potatoes by about 2 inches. Stir in 2 tablespoons of kosher salt. (5 minutes)

02

Step

Bring the water to a rolling boil over high heat. Once boiling, reduce the heat to medium-low and simmer gently until the potatoes are completely tender and easily pierced with a fork, about 30 to 40 minutes.

03

Step

While the potatoes are simmering, prepare the tres leches mixture. In a separate saucepan, combine the evaporated milk, whole milk, and buttermilk. Heat over low heat until warmed through, but do not boil. (5 minutes)

04

Step

Once the potatoes are cooked, drain them thoroughly in a colander to remove excess water. Return the drained potatoes to the pot or transfer them to a large bowl.

05

Step

Using a potato masher or a ricer, mash the potatoes until smooth. Add the butter slices and continue to mash until the butter is fully incorporated and melted. (5 minutes)

06

Step

Season the potatoes with 1 teaspoon of salt, white pepper, and a pinch of cayenne pepper. Gradually pour in the warm tres leches mixture, whisking or using an electric hand mixer on high speed to whip the potatoes until they are light, fluffy, and creamy. (5 minutes)

07

Step

Taste the mashed potatoes and adjust seasoning as needed. Garnish with a drizzle of melted butter and freshly chopped chives, if desired. Serve immediately and enjoy! (2 minutes)

For an even smoother texture, use a ricer instead of a potato masher.
Warm the milk mixture gently to prevent the potatoes from cooling down too quickly.
Don't overmix the potatoes, as this can result in a gluey texture.
Feel free to experiment with different herbs and spices to customize the flavor profile. A pinch of nutmeg or a clove of minced garlic can add a delightful twist.
These mashed potatoes are best served immediately, but can be reheated gently over low heat with a splash of milk if needed.
