For a sweeter sausage, increase the brown sugar to 1 1/2 tablespoons. Add a pinch of nutmeg or allspice for extra warmth. If you prefer a milder flavor, reduce or omit the red pepper flakes. The sausage mixture can be prepared ahead of time and stored in the refrigerator for up to 24 hours before cooking. These sausages are also great crumbled and used in breakfast burritos, omelets, or frittatas.

May 21, 2025This recipe is fantastic! I love that it's healthier than store-bought sausage, and the flavor is amazing. I added a pinch of nutmeg, as suggested, and it was a hit!

Oct 29, 2024I found the original recipe a bit too spicy for my kids, so I reduced the red pepper flakes, and they devoured it!

Jan 17, 2023So easy to make, and tastes so much better than the pre-made stuff. I made a double batch and froze half for later.
