Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray. (5 minutes)

Mix soy milk and 1 tablespoon lemon juice in a bowl and stir. Let sit until curdled. (5 to 10 minutes)

In a medium bowl, whisk together whole wheat flour, cinnamon, baking soda, baking powder, and salt. (3 minutes)

In a large bowl, combine mashed bananas with remaining lemon juice and vanilla extract. Add soy milk mixture and agave nectar syrup. Stir well. Gently fold in the dry ingredients until just combined, being careful not to overmix. Fold in blueberries until evenly dispersed. Pour batter into the prepared loaf pan. (10 minutes)

Bake in the preheated oven until a toothpick inserted into the center comes out clean. (50 to 60 minutes)

Cool bread in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing and serving. (60 minutes)

For an even richer flavor, try browning the mashed bananas lightly in a pan with a touch of vegan butter before adding them to the batter.
Feel free to substitute other berries, such as raspberries or blackberries, for the blueberries.
Store leftover bread in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
