Step

In a large pot, combine the soaked kidney beans, white beans, and lentils. Cover with fresh water and bring to a boil over medium-high heat. Reduce heat and simmer for 1 hour, or until the beans and lentils are tender. (1 hour)

While the beans and lentils are cooking, combine the chopped tomatoes and water in a large saucepan over high heat. Bring to a boil, then reduce heat to low and simmer, uncovered, for 1 hour, or until the tomatoes have broken down and thickened. (1 hour)

Stir the tomato mixture into the pot with the beans and lentils. Add the chopped mushrooms, green bell pepper, red bell pepper, green beans, celery, onions, and crumbled tofu. Season generously with salt, pepper, onion powder, garlic powder, and chili powder to taste. (5 minutes)

Bring the chili back to a simmer, then reduce heat to low and cook for 2 to 3 hours, or until the chili has reached your desired consistency and the flavors have melded together beautifully. Stir occasionally to prevent sticking. (2-3 hours)

For a richer flavor, consider sautéing the onions and bell peppers in a little olive oil before adding them to the chili.
A bay leaf added during the simmering process can also enhance the depth of flavor.
This chili tastes even better the next day, as the flavors have more time to meld. Allow to cool completely before refrigerating.
