Follow The Directions

01

Step
12 hrs

Place navy beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. (8-12 hours)

02

Step
5 mins

Drain navy beans and put into a pot with 5 cups water.

03

Step
1 hrs

Bring water to a boil; reduce heat and simmer until beans are tender, about 1 hour.

04

Step
15 mins

Preheat oven to 250 degrees F (120 degrees C). (15 minutes)

05

Step
10 mins

Combine beans, onion, brown sugar, molasses, vinegar, mustard, garlic, nutmeg, and cinnamon in a 2-quart casserole dish with a lid; season with pepper. Place lid on dish.

06

Step
6 hrs

Bake in the preheated oven, 5 to 7 hours, stirring halfway through and adding water if mixture is too dry. Remove lid and bake until mixture has reduced to desired thickness, about 1 hour more.

For a deeper, smokier flavor, consider adding a teaspoon of smoked paprika to the spice mix.
If you don't have molasses on hand, maple syrup can be used as a substitute, though it will slightly alter the flavor profile.
These baked beans are excellent served with cornbread or as a side dish to your favorite BBQ.
