For a richer flavor, consider searing the venison in batches to develop a deep crust before adding the vegetables. Adjust the amount of red pepper flakes to control the level of spiciness. A pinch of smoked paprika can also add a lovely depth of flavor. If you prefer a thicker chili, you can mash some of the beans before adding them to the pot, or whisk in a tablespoon of cornstarch mixed with a little cold water during the last 30 minutes of cooking.
