A vibrant and refreshing slaw, reminiscent of classic sweet and sour cabbage preparations. This recipe boasts a delightful balance of flavors and a crisp texture that only improves with time. Ideal as a side to rich dishes like beef brisket, it's best prepared a day or two in advance to allow the flavors to meld.

Follow The Directions

01

Step

In a large glass or ceramic bowl (avoid metal or plastic), place the shredded cabbage. Sprinkle with 1/2 cup of the granulated sugar and the salt. (5 minutes)

02

Step

In a separate microwave-safe bowl, whisk together the remaining sugar, oil, vinegar, mustard, celery seed, and black pepper. Stir well to dissolve the sugar.

03

Step

Microwave the mixture on high until it reaches a boil, approximately 2-3 minutes. Use caution when removing from the microwave.

04

Step

Immediately and carefully pour the hot vinegar mixture over the cabbage. Toss gently with a wooden or plastic spoon to ensure the cabbage is evenly coated. (2 minutes)

05

Step

Allow the slaw to sit at room temperature for several hours, stirring occasionally to redistribute the dressing. (3-4 hours)

06

Step

Cover the bowl tightly and refrigerate for at least 24 hours, or up to 2 weeks. (24 hours)

07

Step

Toss before serving. Serve chilled, using a slotted spoon to drain excess liquid.

For optimal flavor, prepare the slaw 24-48 hours before serving.
Adjust the amount of sugar and vinegar to your preference for sweetness and tanginess.
Store in an airtight container in the refrigerator for up to 2 weeks.
Consider adding other vegetables like shredded carrots, diced bell peppers, or thinly sliced red onion for added color and texture.
