Follow The Directions

01

Step

To Make Glaze: In a medium bowl, whisk together the ketchup, pineapple juice, molasses, rum, mustard, and garlic. Season with salt and pepper to taste. (5 minutes)

02

Step

Place chicken pieces in a lightly oiled 9x13 inch baking dish; brush both sides generously with about half of the prepared glaze. Cover the dish and refrigerate to marinate for at least 2 hours, or preferably overnight. Refrigerate the remaining glaze separately. (5 minutes + 2 hours minimum)

03

Step

Preheat oven to 375 degrees F (190 degrees C). (10 minutes)

04

Step

Lightly brush the chicken pieces on one side with some of the reserved glaze and bake uncovered in the preheated oven for about 25 minutes. Turn the pieces, brush with the remaining glaze, and bake for another 25 minutes, or until the chicken is tender and cooked through. (50 minutes)

05

Step

Preheat oven to broil. (5 minutes)

06

Step

Place the chicken under the broiler and lightly brown on both sides, about 2 to 3 minutes per side. Watch carefully, as the sugary glaze can burn quickly! (6 minutes)

For a deeper flavor, try using smoked paprika in the glaze.
Serve with rice and beans or a fresh Caribbean slaw for a complete meal.
The marinade time is flexible, but the longer it marinates, the more flavorful the chicken will be.

The only change I made was using chicken breasts instead of thighs. Still turned out great, but I think thighs would be juicier.

The glaze is a little sweet, so I added a pinch of cayenne pepper to balance it out. Delicious!

Be careful not to burn the glaze under the broiler! Keep a close eye on it.

I made this for a summer BBQ and it was a huge hit! Everyone raved about the glaze.
