For an extra layer of flavor, try grilling the watermelon cubes briefly before adding them to the salad. The slight char adds a smoky dimension.
If you can't find Kalamata olives, other brine-cured black olives will work. Just be sure to pit them before adding.
Feel free to experiment with other fresh herbs like mint or basil. A sprinkle of toasted pumpkin seeds or pine nuts can also add a pleasant crunch.
