Follow The Directions

01

Step
5 mins

Gather all ingredients and prepare your workspace. (5 minutes)

02

Step
40 mins

In a saucepan, combine the sugar, water, and lemon juice. Heat over medium heat, stirring constantly until the sugar is completely dissolved. This should take about 5 minutes. Remove from heat.

03

Step
5 mins

Allow the syrup to cool completely. Refrigerate for approximately 30 minutes to ensure it's thoroughly chilled.

04

Step
2 mins

While the syrup is cooling, puree the watermelon in a blender or food processor until smooth. Strain the puree through a fine-mesh sieve to remove any remaining seeds or pulp for a smoother sorbet. (10 minutes)

05

Step
20 mins

Once the syrup is chilled, gently stir in the watermelon puree until well combined.

06

Step

Transfer the mixture to an ice cream maker and freeze according to the manufacturer's instructions. Typically, this takes about 20-25 minutes.

07

Step

Once the sorbet has reached a soft-serve consistency, transfer it to an airtight container and freeze for at least 2 hours to firm up before serving. This will improve the texture and prevent it from melting too quickly.

For an extra layer of flavor, add a few fresh mint leaves to the blender when pureeing the watermelon.
Adjust the amount of lemon juice to your liking, depending on the sweetness of your watermelon.
If you don't have an ice cream maker, you can still make this sorbet! Pour the watermelon mixture into a shallow dish and freeze for 2-3 hours, stirring every 30 minutes to break up ice crystals. This will result in a slightly icier texture, but still delicious.

Next time, I might try adding a splash of vodka to prevent it from freezing too hard.
