Turn the chicken thighs so the skin side faces up. Remove the skillet from the heat. Sprinkle the remaining za'atar evenly over each thigh. Spoon some of the rendered chicken fat from the pan over the za'atar for added richness. (Prep time: 2 minutes)

Place the skillet in the preheated oven and roast until the juices run clear and the chicken is no longer pink near the bone. (Cook time: 15 minutes)

For extra crispy skin, ensure the chicken thighs are very dry before searing.
Don't overcrowd the skillet; cook in batches if necessary to ensure even browning.
