Follow The Directions

01

Step
5 mins

In a large skillet, heat olive oil over medium heat. Add onion and cook, stirring occasionally, until translucent (about 5 minutes).

02

Step
5 mins

Stir in sugar until dissolved. Add zucchini, dill, and rice. Cook, stirring occasionally, until zucchini begins to soften (about 5 minutes).

03

Step
20 mins

Add water, season with salt and pepper, and bring to a boil. Reduce heat to low, cover, and simmer until rice is cooked and water is absorbed (about 20 minutes).

04

Step

Turn off the heat and let the mixture cool to lukewarm.

05

Step

In a separate bowl, combine yogurt, crushed garlic, and 1/2 teaspoon salt. Mix well.

06

Step

Serve the garlic-yogurt sauce over the zucchini and rice mixture.

For an extra layer of flavor, try adding a pinch of red pepper flakes to the zucchini mixture.
Feel free to substitute summer squash for zucchini. Yellow squash or a combination of both works beautifully.
If you prefer a thicker yogurt sauce, use Greek yogurt. For a thinner sauce, regular yogurt is a great choice.
Adjust the amount of garlic to your liking. Start with two cloves and add more if desired.
