Follow The Directions

01

Step

In a large skillet, heat 2 tablespoons of olive oil over medium heat. (2 minutes)

02

Step

Working in batches to avoid overcrowding, cook zucchini slices until softened and lightly browned on both sides, adding more olive oil as needed to prevent sticking. (5-10 minutes per batch)

03

Step

Remove zucchini slices from the skillet and drain on paper towels to remove excess oil.

04

Step

Sprinkle each zucchini slice generously with crumbled feta cheese. Roll up tightly, securing each roll with a toothpick.

05

Step

Arrange the zucchini rolls snugly in a dish that is approximately the height of the rolls.

06

Step

Sprinkle the rolls evenly with minced garlic and dried Italian herbs. Drizzle with balsamic vinegar.

07

Step

Cover the dish tightly and marinate in the refrigerator for at least 24 hours, or up to 2 days, to allow the flavors to meld and intensify.

For a richer flavor, consider using balsamic glaze instead of balsamic vinegar.
If you don't have Italian herbs, you can use a combination of dried oregano, basil, rosemary, and thyme.
Adjust the amount of garlic and herbs to your liking.
Serve chilled or at room temperature. Remove toothpicks before serving.
