Prepare the grill: Preheat an outdoor grill to medium heat (about 350-400°F) and lightly oil the grates to prevent sticking. (5 minutes)

Make the balsamic vinaigrette: In a small bowl, whisk together 2 tablespoons of olive oil, balsamic vinegar, Dijon mustard, salt, and pepper until well combined. Set aside. (2 minutes)

Prep the radicchio: Cut the radicchio head through the core into 4 equal wedges. Brush the cut sides of each wedge with the remaining 1 tablespoon of olive oil and lightly sprinkle with salt. (3 minutes)

Grill the radicchio: Place the radicchio wedges on the preheated grill, cut-side down. Grill for 3 to 4 minutes per side, or until they are lightly charred and slightly softened. Watch carefully to prevent burning. (8 minutes)

Assemble and serve: Transfer the grilled radicchio wedges to a serving plate. Sprinkle with chopped pistachios and crumbled blue cheese. Drizzle generously with the balsamic vinaigrette. Serve immediately while the radicchio is still warm and the cheese is slightly melted. (2 minutes)

For a deeper smoky flavor, try using wood chips, such as hickory or mesquite, in your grill.
If you don't have white balsamic vinegar, regular balsamic vinegar will work, but it will impart a darker color to the dressing.
Feel free to experiment with different types of nuts and cheeses. Walnuts or pecans would be a delicious alternative to pistachios, and goat cheese or feta cheese could be used instead of blue cheese.
For a vegetarian/vegan version omit the blue cheese.
