For a vegan option, substitute the heavy cream with full-fat coconut milk for a similar richness. Adjust the amount of crushed red pepper to your liking for a spicier soup. Fresh thyme or oregano sprigs added to the roasting vegetables can enhance the herbal notes of the soup. If you don't have a blender, an immersion blender works just as well. Blend directly in the pan after roasting. The roasted vegetables can be prepared a day ahead. Store them in the refrigerator and blend when ready to serve.
